What is Skyr?
An Icelandic culturied dairy product, similar to strained yogurt. Technically, it is a fresh acid-set cheese.  It has been a part of Icelandic Cuisine for over a thousand years.  It is traditionally served cold with a topping of sugar and cream.

 
Our Not-Secret Ingredient: Organic Grass Fed Jersey and Guernsey Milk
If you don't know a Jersey from a Milking Shorthorn, here's what matters: not all breeds are created equal. Some, like Jerseys and Guernseys, make richer, thicker, more nutritious, better-tasting milk. That's the milk we use.

Compared to regular milk, this milk has 15% to 20% more protein, and 15% to 18% more calcium.

Richer milk means thicker yogurt. High-protein milk means high-protein yogurt. Pure milk means pure yogurt.

In fact, that's why we call our unflavored yogurt pure. It's anything but plain.

PS: Our cows don’t live in Iceland. They’re in Wisconsin. Which can feel a lot like Iceland, especially in January.

What is skyr?
Skyr, pronounced "skeer," is the traditional yogurt of Iceland. It is made by incubating skim milk with live active cultures. The whey, the water naturally found in milk, is then strained away to make for a much thicker, creamier, concentrated yogurt. To make just one cup of skyr, with all that water going out, you need 4 times the amount of milk required to make a regular cup of yogurt. As a result of this process, skyr contains 2-3 times the protein count of standard yogurt.

 
What separates siggi's?
At siggi's, we make delicious yogurt products with not a lot of sugar and simple ingredients. Our products are based on Scandinavian dairy traditions, such as skyr, the traditional Icelandic yogurt. Our products don't contain any of those dreadful artificial sweeteners. We only use milk from farmers who do not use growth hormones such as rBGH.

 
Why does skyr yogurt have so much protein?
When making skyr, we start by making a base that is kind of like regular yogurt. Then we strain the whey, the water in milk, and wind up taking about 75% of that water out. This means that to make one cup of skyr we require about 3 - 4 times the amount of milk required to make a regular cup of yogurt. As a result of this process, skyr contains 2-3 times the protein count of standard yogurt.

What is rjóma-skyr?
Skyr is the traditional yogurt of Iceland. It is made by incubating skim milk with live active cultures. The whey, the water naturally found in milk, is then strained away to make for a much thicker, creamier, concentrated yogurt. So to make just one cup of skyr, with all that water going out, you need 4 times the amount of milk required to make a regular cup of yogurt. As a result of this process skyr comes out with 2-3 times the protein count of standard yogurt.

Since skyr is fat-free it has been an age old practice to throw a bit of cream back into it for a tad richer touch: generally called rjóma-skyr; or skyr with cream. Delicious!
