CIDER IS SIMPLE

Naturally gluten free and made from a custom blend of fresh pressed, locally grown Washington apples, Seattle Cider’s products are handcrafted with real ingredients, successfully distinguishing themselves from the mass market cider found in stores today.

 

We use a custom blend of fresh pressed Washington grown apples to create our cider.

A strain of white wine yeast is used to achieve Seattle Cider's unique flavor profile.

The Cider Process

STEP 1: PICKING & PRESSING THE APPLES

ONCE RIPE, APPLES ARE HANDPICKED FROM ORCHARDS IN EASTERN WASHINGTON. APPLES ARE GROUND INTO A PULP THEN PRESSED, CREATING A SUGARY JUICE CALLED “MUST.”

 

STEP 2: FERMENTATION

IN ORDER TO ELIMINATE UNWANTED WILD YEAST AND BACTERIA, THE MUST IS TREATED WITH SULFITES. AFTER 24 HOURS, A CULTURED YEAST CAN BE SAFELY PITCHED, COMMENCING FERMENTATION. ONCE ALL THE SUGARS HAVE CONVERTED INTO ALCOHOL, LEAVING LITTLE TO NO RESIDUAL SUGAR, FERMENTATION IS COMPLETE.

 

STEP 3: CLARIFICATION

THE CIDER IS THEN RUN THROUGH A FILTER TO HELP WITH CLARIFICATION.

 

STEP 4: POST-FERMENTATION

NOW ITS TIME TO CARBONATE AND AND AT TIMES, BACK SWEETEN. THIS IS THE PROCESS OF ADDING SUGAR BACK INTO THE CIDER. THE AMOUNT OF RESIDUAL SUGAR IN A CIDER IS MEASURED IN BRIX.

 

STEP 5: CAN, BOTTLE & KEG

ENJOY! OUR CIDERS ARE PACKAGED AND SENT OFF TO BE ENJOYED. FIND THEM IN 16-OUNCE CANS, 22-OUNCE BOTTLES AND ON DRAFT.

Marijuana Infused Bacon is a Thing Now

SEATTLE -- Pot-infused bacon? There's a shop for that.

A Seattle butcher said he's found a way to marry marijuana and meat - by feeding pot plants to pigs.

"We're able to make anything you can imagine," said William von Schneidau, who runs BB Ranch Meats in the heart of Pike Place Market. "Somebody requests something and we make it, and make some extra of it, and see if people like it."

Von Schneidau, who has long experimented with meat - even feeding vodka to hogs in the past - said he can't remember how he came up with the idea to feed pot to pigs.

"I don't smoke, but I guess it's foggy," he said, chuckling.

He partnered with a local medical marijuana grower earlier this year to take the remnants of pot plants and feed them to swine on a ranch in Snohomish.

"People have been asking all these questions. 'Do you think (the pigs are) feeling it? Are they stoned?' and I'm like, 'Wait a minute. Let's back up here for a second.' All we're trying to do is to help the local ranchers and to figure out some ways to shorten the carbon footprint," von Schneidau said.

The shop sold four pigs in various forms earlier this year, including with pot-infused bacon. The meat "tasted savory," von Schneidau said, adding that he has a small amount leftover that he's using to make into prosciutto.

A few feet from his store - in front of the famous, glowing Pike Place Market sign - tourists stood by another pig Tuesday, posing for pictures and putting money into its bank.

"It seemed like a good cause," said one visitor from Philadelphia, as she placed coins into Rachel the Pig, the Market mascot which raises money for charity.
When asked about the other pig at the nearby butcher shop, she laughed.

"Hash pigs! Let's give more money," she said, chuckling. When asked about what the pot pigs might taste like, she joked, "I'll take the fifth."

"We haven't fed them any sour pickles yet," von Schneidau said about future possibilities, "but we'll see what happens."

Seattle to Grow a One-of-a-Kind Food Forest

After several years of planning, Seattle will grow the country’s first urban food forest. The 7-acre Beacon Food Forest will take root in a previously empty area adjacent to the west side of Jefferson Park, (approximately 2.5 miles away from downtown) and has the potential to be one of the country’s largest forest-gardens grown on public land.

According to organizer Melanie Carver, this food forest project is based on designing an edible landscape that is intended to thrive with minimal management. This means that the forest will include (among other plants) several different trees and bushes that self-propagate and generally do not heavily rely on intensive human management. To reflect the diversity of the surrounding Beacon Hill community, organizers also plan to feature temperate plant species from around the world, which will include a variety of pears, persimmons, cherries, and apples.

The forest will be built and managed by a community of volunteers, and the food will be free for the taking. The founders of the project also have plans to use the forest for other community projects including garden plots, resources for craft guilds (like plants for natural dyes and branches for basket-weaving), and other food-related experiments like mushroom cultivation.

The Bullitt Center is made from totally clean materials, has composting toilets, and catches enough rainwater to survive a 100-day drought. And it’s 100% solar-powered, in a city not known for its sunny days.

eattle’s Bullitt Centeris being heralded as the greenest, most energy-efficient commercial office building in the world. It’s not that the six-story, 50,000-square-foot building is utilizing never-before-seen technology.
