Crowdfunding Spotlight: The Meat Merchants – A pub snack revolution

 

 

We need to rescue the discerning British beer drinker from their current snacking nightmares.

 

Who are the Merchants?
We are Sean and Danny, founders of Meat Merchants, and school friends of old. After pursuing our own foodie dreams we’ve reunited to explore a shared love for quality meat and tasty beer. Tired of crying into our pints over the state of traditional pub snacks, we are moved to change things for the better. An idea was born and the pub snack revolution begins.

I (Dan Searle), run two pubs in my hometown of Norwich and Sean Cannon runs a busy charcuterie wholesale business, a delicatessen and a London restaurant. It’s a match made in pub snack Heaven!

 

Why do we exist?
As a beer drinker (or just a serious snacker) the options for a tasty snack over the bar are seriously lagging behind the offerings of today’s forward-thinking drinking establishments, not to mention the rest of the world. And so we believe that it is high time that someone put together a top quality, affordable and meaty pub snack with a modern brand feel and an ethical grounding.

With a wealth of experience in both the sale of fine charcuterie, and in running beer-focused pubs, we are ideally placed to source a range of cured meat snacks that improve drastically upon the humble salted peanut. The quality of the beer being produced in this country is now phenomenal, and it’s our intention to provide a snack that can hold its own amidst the flavours of craft beer and good real ale.

 

 

What exactly do we offer?
The Meat Merchants range showcases dry-cured meats of the highest quality; packaged and ready to be sold without hassle, over the bar - or indeed, delivered to your home. The range has been chosen to compliment beer, though our products go very well with wines and in fact pretty much anything that’s wet and in the pub.

Over time our range will expand according to where our taste buds take us. We are Merchants, and we want to bring the finest cured meat snacks to the British drinker.

Chorizo Bombs
Best-quality, air-dried Chorizo, handily divided into bite-size pieces. Lean pork meat is blended with paprika, spices, chilli, and herbs. Flavour profile is spicy and rich. Packs weigh in at 40g.

Pairing: Beers with good body pair particularly well with the Chorizo Bombs. Rye IPAs and ales, and stronger IPAs with a sugary mouth feel are our favourite.

Salami Bombs
Best-quality, air-dried pork salami, handily divided into bite-size pieces. Lean pork is blended with a subtle mix of herbs, spices, and traditional curing salts. Packs weigh in at 40g.

Pairing: We often go for high-aroma, American style pale ales with our salami, or any beer with a sharp bitterness.

Snacking Beef / Hot Snacking Beef
Biltong by another name. Lean slabs of silverside are swathed in spices and curing salts, and then hung up to dry slowly. We currently offer two varieties: one made with and one without hot spices. Our Hot Snacking Beef is markedly spicier than the ‘standard’ variety. Packs weigh in at 35g.

Pairing: The hot variety goes well with an amber ale or the toffee smoothness of a best bitter. The regular Snacking Beef comes to life with a good porter (just like roast beef) or black IPA.

What We Need & What You Get
We are looking for £3500 to invest in the best possible packaging for the product and its intended use. We have been working on this project for almost a year now and find ourselves at the final stages with hopes and dreams of launching January 2015!

We have been working with various packaging along the way and in order to avoid quality issues and deliver the best looking product possible we have found the perfect packaging solution (after lots of trial error we have to admit!).

However there is a large investment required into kilos of pre-printed packaging. All of our funds raised will go directly toward this.

World’s First Test Tube Burger Is Ready To Eat

 

 

The world's first test tube burger will be cooked and eaten at a live demonstration of "cultured beef" technology in London next month.

The burger is being created from thousands of strands of artificial meat that have been painstakingly grown from stem cells in a laboratory.

Prof Mark Post will explain how he created the test-tube meat at his laboratory at Maastricht University in the Netherlands, before serving the resulting patty to a mystery diner.

He will present the beefburger as a "proof of concept" that laboratory-grown meat could in future become a sustainable alternative to farmed beef, pork or chicken, potentially cutting billions of tonnes of greenhouse gases currently released by livestock.

Scientists Design DNA Test to Predict Best Steaks Ever

A team of French (of course) researchers have created a DNA chip that can analyze specific genes in meats to rate the quality

High-tech science may slowly be making its way into our restaurant kitchens and bars, with centrifuges and liquid nitrogen, and it looks like DNA testing might be the next wave.

Science Daily reports that the meat industry may just get a dose of DNA tests to determine the quality of beef you can buy on store shelves. A team of French researchers, led by Jean-François Hocquette at the Herbivore Research Unit of the National Agronomic Research Institute, have sifted through to find more than 3,000 genes that somehow impace a meat's texture, flavor, and juiciness. "These genes belong to different families: those which regulate fat, connective tissue, and protein contents of muscles, respectively," Hocquette said.

After finding these genes, the researchers developed a DNA chip that can analyze the activity of the genes in beef samples, meaning almost any type of beef will get a taste rating. To test, they had a panel taste test the same beef samples and give a score.

When comparing the gene test and the taste test, the researchers found that better gene scores meant better taste scores. In fact, the study reports in the journal Biomed Central Veterinary Research, some of the genes accounted for up to 40 percent for the difference in tenderness in samples. So perhaps better tasting meat has to do with both animal-raising technique as well as heritage? Explains a lot about Kobe beef, then.
