Food Spotlight: NYSHUK Harissa



Thick, vibrantly red, and lusciously textured, the piquant chile paste beckons you the way it has beckoned North African cooks for centuries.

Imagine sitting down at an outdoor cafe in Marrakech, Tunis, or Tel Aviv. The air is perfumed with spice, and on the table in front of you sits a plate of something delicious, a glass of fresh mint tea, and a small jar of harissa.

Harissa has been at the center of Maghreb cuisine ever since New World explorers first introduced the Latin American pepper to Europe in the 16th century. (Scholars believe that chiles likely travelled to North Africa along with Spanish colonizers or roving spice traders.) With their beguiling flavor and easy adaptation to their new, sultry climate,  Maghreb cooks quickly learned to love the chile pepper – particularly when pounded into an oil and spice-enriched paste that delivered fiery complexity to their food.
Today, harissa is a staple of Tunisian, Libyan, Algerian, and Moroccan cuisine. It is also revered in places like France and Israel, which are home to large populations of people from these countries.

In the United States, harissa is quickly gaining popularity as a flavorful alternative to condiments like ketchup, salsa, and sriracha, as well as a potent ingredient that amps the flavor of any dish it touches.



Harissa is a remarkably versatile condiment that can spice up anything from lamb kebabs to fried eggs. Growing up, Ron’s family used it all the time – as a dipping sauce for fried fish, in traditional mashed potato and ground beef dumplings called popletas, in Moroccan carrot salads and fresh tomato salads, and to flavor chickpea dishes.
At home, try stirring a spoonful of NYSHUK harissa into soup for an extra kick of heat, or dilute it with oil to create a fragrant dipping sauce for bread or pita. Drizzle a little over hummus, grain salads, or roasted root vegetables; add it to marinades for chicken, beef, fish, or tofu; slather it on sandwiches, or dollop some onto a burger for an unforgettable twist. LAST YEAR I launched my first sriracha Kickstarter to raise enough money to help me get my family sriracha recipe from my kitchen table to local farmer's markets. I was so excited to have raised 896% more funds than I had originally hoped for. I was able to use the extra money to do all of the things promised in that Kickstarter, including refining my recipes and investing in the equipment I needed to get into farmer's markets. Since then we have continued to grow and have done many great things, including redesign our labels, rent a commercial kitchen for the production and storage of our sriracha, and even started development of a new sriracha sauce.


TODAY we need your help to bring our newest sriracha sauce to the world. Our Ghost Pepper Sriracha is the hottest and most flavorful yet. We use smoked bhut jolokia peppers (along with a lot of love) in our new recipe. Like all of our sriracha sauces, we age our peppers until they are ready to become sriracha sauce.

Q: Someone gave me a package of your "Spicy Tomato Garlic Dipping Oil" ... what the heck do you do with it???

A: Let's see, the first thing you should do is call Someone as soon as possible and say: "Thank you (Someone), you are a person of good heart and taste".  After that, I suggest that you dip some good bread in your newly acquired (and previously shaken, preferably like a monkey) dipping oil and contemplate what you might do with it next.

Now, assuming that you are a creature of moderate habits, and not currently surrounded by hungry friends, you will subsequently have a good quantity left in the fridge.  If you are of a carnivorous bent, we recommend using some as a marinade for any kind of meat (it also works well as a baste for the grill).  If you are more of a veggie fan, try roasting vegetables coated with it (Brussels Sprouts are in season) or using it as a dressing for salads or sandwiches. You can also stir it into pasta, as you would a pesto (great hot or cold). Since it's a pretty color, you can also use it for artful drizzling.

Some people just dip bread in it, others put it on almost everything (up to and including each other)
