OUR STORY

Founded by Hannah McCollum, ChicP was set up to bring healthy, colourful dips to the food market. A lover of hummus and tired of bland, unhealthy options, Hannah decided to combine her creative cooking and eagerness to help prevent food waste, into healthy, punchy vegetable hummus from surplus vegetables.

Over the last five years, Hannah has cooked for families in the UK and all over Europe, predominantly as a private chef. She would often convert the leftover Ottolenghi type salads into dips for the next meal. Nearly every day the question would be “what’s the dip of the day Hannah”?!

The inspiration behind ChicP was the overriding determination and passion to change the way we approach cooking and food waste.

The hummus is made primarily from raw vegetables, one of the healthiest food options available.

Our hummus is not just for eating as a dip but fantastic with any meal, as an accompaniment or sauce; add to chicken, fish, veggies, pasta or as a spread. The list is endless... be creative!

As the old saying goes - "waste not want not...!"

 

EDUCATION

It is hugely important that the younger generation are educated about their food – where it comes from, how to eat well and healthily, how to reduce waste and to be as sustainable as possible. What is fantastic is that at the schools I have attended, the children are incredibly interested in eating good and healthy food as well as being wholly engaged and curious in discussions about sustainability and how their schools can make a difference. This will determine the future of our food industry and the environment, and help create a new and dynamic attitude to waste.

THE STORY OF MAZA CHOCOLATE

The idea and inspiration behind MAZA Chocolate came about after christmas 2015 – yes as recently as that. I am passionate about fueling my body with the most nutritious foods and creating the most delicious flavours that I am able to.

Healthy or nutritious should never have to be associated with boring or unadventurous! I love to cook and therefore cooking fresh food for my family was never a chore.

Just after christmas my elder daughter was turning 14 and I wanted to buy her some luxurious chocolates with a high cacao content and no sugar.

I didn’t really know what I was looking for in terms of ingredients but I was surprised when the chocolate I selected was laden with sugar even though the packaging suggested that it was a “healthy” choice.

 

Healthy or nutritious should never have to be associated with boring or unadventurous!

So I set about making my own. I didn’t know anything about making chocolate. Bean to bar meant nothing to me until I began researching night after night and learnt that there was a very niche market out there for real, small batch artisan chocolate.

I wanted to take this to the next level and create a luxury chocolate suitable for gifting as there wasn’t anything out there without regular sugar.

I had used organic palmyra nectar for a while at home and thought about using organic palmyra nectar to sweeten the chocolate to obtain the sweetness and take advantage of this superfood which is the most superior of the natural sweeteners.

There was a lot of trial and error in creating the first chocolate in the UK which is sweetened with organic palmyra nectar. The MAZA journey is by no means complete. We believe we have an outstanding product but we are always looking to develop more blends and flavours to keep our customers coming back for more!

MAZA is an ongoing venture to achieve the perfect chocolate which balances health with indulgence.

The inspiration behind the flavours also comes from my wellness passions. So the “dark” is just that, real dark chocolate with no added ingredients. All 3 bars contain 70% cacao yet their flavour profiles are so distinctly different.

The Almond Butter is also 70%, it is ground with almonds and the cacao is sourced from Columbia and the Dominican Republic. Then a final sprinkling of almonds and sea salt create the perfect contrast against the intense richness of the cacao.

However, the coconut which is ground with coconut as oppose to extracts and flavours, has a much more fruity flavour and a deep red appearance. The coconut is made using Madagascan cacao which has a natural berry like flavour and colour.

Seattle Cider Company is Seattle’s first cidery since Prohibition, bringing true craft cider back to Seattle and across the country. Bridging the gap between wine and beer with flavorful, small-batch cider, Seattle Cider’s initial offerings – Dry and Semi-Sweet – break the mold of overly sweet cider, bringing the natural flavors of Washington apples to the forefront.

 

 

CIDER IS SIMPLE

Naturally gluten free and made from a custom blend of fresh pressed, locally grown Washington apples, Seattle Cider’s products are handcrafted with real ingredients, successfully distinguishing themselves from the mass market cider found in stores today.

 

We use a custom blend of fresh pressed Washington grown apples to create our cider.

A strain of white wine yeast is used to achieve Seattle Cider's unique flavor profile.

We use pure cane sugar - not artificial sweeteners or adjuncts - to achieve the perfectly subtle sweetness found in most of our ciders.

Real ingredients such as spices, pumpkin, raisins and more are introduced during fermentation to create unique seasonal ciders.

 

The Cider Process

STEP 1: PICKING & PRESSING THE APPLES

ONCE RIPE, APPLES ARE HANDPICKED FROM ORCHARDS IN EASTERN WASHINGTON. APPLES ARE GROUND INTO A PULP THEN PRESSED, CREATING A SUGARY JUICE CALLED “MUST.”

 

STEP 2: FERMENTATION

IN ORDER TO ELIMINATE UNWANTED WILD YEAST AND BACTERIA, THE MUST IS TREATED WITH SULFITES. AFTER 24 HOURS, A CULTURED YEAST CAN BE SAFELY PITCHED, COMMENCING FERMENTATION. ONCE ALL THE SUGARS HAVE CONVERTED INTO ALCOHOL, LEAVING LITTLE TO NO RESIDUAL SUGAR, FERMENTATION IS COMPLETE.

 

STEP 3: CLARIFICATION

THE CIDER IS THEN RUN THROUGH A FILTER TO HELP WITH CLARIFICATION.

 

STEP 4: POST-FERMENTATION

NOW ITS TIME TO CARBONATE AND AND AT TIMES, BACK SWEETEN. THIS IS THE PROCESS OF ADDING SUGAR BACK INTO THE CIDER. THE AMOUNT OF RESIDUAL SUGAR IN A CIDER IS MEASURED IN BRIX.

 

STEP 5: CAN, BOTTLE & KEG

ENJOY! OUR CIDERS ARE PACKAGED AND SENT OFF TO BE ENJOYED. FIND THEM IN 16-OUNCE CANS, 22-OUNCE BOTTLES AND ON DRAFT.

Shared with Two Beers Brewing, The Woods features 24 tap handles, seating for more than 150 people, a sun-filled outdoor patio, HD TVs for watching the game and games, including pool, shuffleboard and darts. Pull up a seat to our handcrafted bar and enjoy a great selection of pints and tasters, or grab cans and bottles to go. Hungry? Now located inside The Woods is the first brick-and-mortar location for Bread & Circuses, offering reimagined versions of bar favorites, plated and shareable items, and a rotating menu changing with the season. Please note, the tasting room is 21+ and dogs are always welcome.

Company Spotlight: Nonna Pia’s Balsamic Reductions

 

 

The Company – Chef Norm honed his cooking skills and great taste for food at a very young age, gleaning almost everything he knew from his mother Pia (“Nonna Pia” to his children). Back then, Pia would always say to him…”Norman, you need to learn how to cook because when you grow up you may marry someone who cannot cook”. As Mothers always know best, the passing of time had proven Nonna Pia correct. Norm ended up marrying Natasha who is great at many things…cooking not being one of them. Because of Nonna Pia’s insightful wisdom and her patience in teachings, Chef Norm wanted to name the company after his mother, and that is how ”Nonna Pia’s Gourmet Sauces” was born in November of 2010.

The Product – Around 20 years ago, on a restaurant tour of Modena, Italy, Norm had the good fortune of tasting 50 year old Balsamic Vinegar straight from the barrels. He fell in love with the deep, rich flavour of Balsamico Traditionale and when he returned to Canada he tried to find more of this nectar of the Gods. Back then, balsamic vinegar was relatively new and unknown in North America, and very difficult to find. If you were lucky enough to find any, it always came at a costly price. It was at this point, after understanding the painstaking and timely process behind making aged balsamic vinegar, Norm decided to try to emulate its incredible flavour by creating a balsamic reduction himself.

In the following years, working from the flavour memory of his positively haunting taste experience in Modena, Italy, Norm perfected his recipe making an incredible Balsamic Reduction that he served mostly to friends and family.

After numerous dinner parties, the odd glass of wine and a lot of encouragement from friends and family, Norm and Natasha decided to bottle their Balsamic Reductions and see if anyone would take a chance on buying them.

They put their kids to work, at that time Oliver, 2 and Georgia, 4, and they began to make their Balsamic Reductions in their home kitchen. This process included two pots simmering on their kitchen stove, Georgia manning the bottle washing station and Oliver, not to their surprise, offering his expertise in quality control. The four of them started travelling to various markets and shows over the next year, peddling their wares and finding out that people loved their reductions. The following two years consisted of Norm and Natasha working their regular jobs during the day and borrowing commercial kitchens at night to make these incredible Balsamic Reductions….Before they knew it, Norm had left his day job and Natasha had resigned from her job as a physiotherapist to form the production and sales team for Nonna Pia’s. Both of them now manufacture and sell Balsamic Reductions full time to as many retail stores as possible.

The Growth – In March of 2014, Nonna Pia’s Balsamic Reductions was chosen to film for the TV series Dragons Den at CBC in Toronto….the big smoke! Off they went to visit hair, makeup and the scary Dragons! In the 5 months following the filming, with some fantastic mentoring and a tough butt kicking from David Chilton (CBC Dragon, who has incredible expertise and passion for growing businesses), they increased their distribution dramatically becoming a staple in every pantry and a household name on many grocery store shelves. Their store count increased from 358 stores to over 1600 stores and their Dragons Den episode had not even been aired on television yet!

Nonna Pia’s now has their own production facility in Whistler, BC (which has recently doubled in size) and it is here where all of their Balsamic Reductions are manufactured. Nonna Pia’s Balsamic Reductions are now sold in every major grocery chain in Canada and they have recently launched their product into the USA.

To finish off, it is important to highlight Norm and Natasha’s children, Georgia and Oliver, and explain their involvement in the growth of Nonna Pia’s. Georgia and Oliver have worked in the business for the better parts of their lives. In the beginning when their reductions were made at home, people knew when Georgia and Oliver had arrived at the local pool as they and their towels would all smell like vinegar! During the last 5 years, they have spent their weekends working at farmers markets and shows impressing customers with their selling skills. Educating customers on the differentiators of Balsamic Reductions and handling cash and credit cards, both children have been living and breathing balsamic while developing life skills for years to come. Georgia’s is very particular when training new staff for the farmers markets and shows and Oliver continues to head up Quality Control, tasting every single sample he can get his hands on.
