New seasonal cider is not-too-sweet, made with a touch of Vermont maple syrup

WALDEN, N.Y., Feb. 14, 2017 /PRNewswire/ -- Today, the cider makers at Angry Orchard announced the national release of its new seasonal hard cider Angry Orchard Tapped Maple, available now through April. Tapped Maple blends American culinary apples with a hint of maple syrup from Vermont maple trees for a not-too-sweet cider with a big, bright apple taste.

Because cider making follows a seasonal path alongside apple trees and harvest, cider makers are especially tuned into the seasons. At Angry Orchard's Cider House in the Hudson Valley of New York, the cider makers like to play around with adding seasonal ingredients to cider recipes to create unexpected, but seasonally appropriate, flavor combinations. For example, with Angry Orchard Tapped Maple, they took inspiration from the highly-anticipated late-winter tapping of maple trees to make something completely new. The base cider is made from culinary apple juice and is actually quite dry. The maple syrup – rich in flavor and natural maple sweetness – adds a delicate balance, and gives the cider a strong maple-forward aroma, and full, round mouthfeel. It's a great flavor profile for the last days of winter leading into spring's cool start.

"Like apples, not all maple syrup is created equal. The flavors can vary significantly from season to season and depending on production techniques," said Ryan Burk, Head Cider Maker at Angry Orchard. "My team and I visited maple farmers from across the Northeast to dive deeper into the qualities that make maple syrup unique, then took those findings back to our Cider House to incorporate this natural sweetener into a dry cider we'd been working on. Ultimately, we found a nice combination with Tapped Maple."

Tasting Notes from Angry Orchard's Cider Makers:

  • Tapped Maple (5.0% ABV): Made from apples high in acidity, the dry cider base is then backsweetened – a common cider making technique that occurs after fermentation – with maple syrup to achieve balance between contrasting flavors.  This cider is made from a blend of culinary apple varieties from the renowned Pacific Northwest region including Braeburn, Fuji, Granny Smith, Gala and Pink Lady apples. Tapped Maple offers a flavorful contrast to dishes like southern fried chicken or pork tacos, but also pairs well with classic hearty desserts like bread pudding.

The seasonal experimentation also led to another new limited release cider in Angry Orchard's Winter Orchard Sampler Variety Pack, Angry Orchard Spiced Apple. Spiced Apple combines a fresh apple taste with lively seasonal spices, much like a classic baked apple pie. A mix of culinary apples like Braeburn, Fuji, Granny Smith and Gala French, and bittersweet apples, such as Amere de Berthecourt, Beden, Medaille d'or, Michelin, and Binet Rouge were used in the making of Spiced Apple.

Lillevik Alpine is a new brand of apple cider based in Queenstown, New Zealand with strong European influences. Without artificial additives this refreshing cider has a perfect balance of sweet with a powerful flavour.

 

 

Concept
We’ve created a logo based around an attractive illustration shield. The design of the shield was inspired by the name ‘Lillevik Alpine’ that refers to a family holiday home in Norway belonging to the maker of the Cider.

Regarding the morphology of the shield we decided to work with lines, responding to the connection between Europe and Oceania. This is one of the main values that the brand has. We wanted to reflect the origins of the maker, since the taste of the cider blends between a traditional European flavour and the freshness and modernity of Oceania. Our goal is to communicate an honest identity of a product with a simplicity that makes it great. It is important to clarify that the decision to create a shield was not based on defense or heraldry. The family’s memories and special moments in their Alpine house are reflected and commemorated in this small postcard.

There is a relevance and intention that underpins every choice. The typography, colour palette, label material and print finish, all give to Lillevik Alpine Cider an impactful and appropriate visual identity. We believe that the blue shield over the red background creates a personal and different approach in this product category that generates an impact on the street.

About the company

The Infinite Monkey Theorem states ‘that a monkey hitting keys at random on a typewriter for an infinite amount of time will almost surely type a given text, such as the complete works of William Shakespeare’. 

Yes we named our winery after an old mathematical theorem. When you think about it, it’s all about creating order out of a chaotic system and, we would argue, there is nothing more chaotic than growing grapes at 4,500 ft in Colorado and making wine in a warehouse in an alley in a city.  There are an infinite number of variables at play, decisions to be made and possible outcomes.  It is the job of our team to create order out of this inherently chaotic system as we craft our ridiculously good wine.

When we started the winery, we decided to focus on the variables that really mattered: using the best grapes, harvesting them at their peak, nurturing each batch of juice as it became our wine, and getting to know the people who drink it. We also decided to get rid of the variables that don’t matter: the vineyard  location, the rolling hills, and the tasting room covered in granite and marble.

Because The Infinite Monkey Theorem believes the culture surrounding the winery helps define the wine’s quality, the winery takes its position and influence in the local Denver community very seriously.  The wines are not only expressions of the local fruit, the process, and the personality of the winemaker, but also expressions of the people drinking the wine. It is a product born out of the community and thus representative of the community.

CIDER IS SIMPLE

Naturally gluten free and made from a custom blend of fresh pressed, locally grown Washington apples, Seattle Cider’s products are handcrafted with real ingredients, successfully distinguishing themselves from the mass market cider found in stores today.

 

We use a custom blend of fresh pressed Washington grown apples to create our cider.

A strain of white wine yeast is used to achieve Seattle Cider's unique flavor profile.

We use pure cane sugar - not artificial sweeteners or adjuncts - to achieve the perfectly subtle sweetness found in most of our ciders.

Real ingredients such as spices, pumpkin, raisins and more are introduced during fermentation to create unique seasonal ciders.

 

The Cider Process

STEP 1: PICKING & PRESSING THE APPLES

ONCE RIPE, APPLES ARE HANDPICKED FROM ORCHARDS IN EASTERN WASHINGTON. APPLES ARE GROUND INTO A PULP THEN PRESSED, CREATING A SUGARY JUICE CALLED “MUST.”

 

STEP 2: FERMENTATION

IN ORDER TO ELIMINATE UNWANTED WILD YEAST AND BACTERIA, THE MUST IS TREATED WITH SULFITES. AFTER 24 HOURS, A CULTURED YEAST CAN BE SAFELY PITCHED, COMMENCING FERMENTATION. ONCE ALL THE SUGARS HAVE CONVERTED INTO ALCOHOL, LEAVING LITTLE TO NO RESIDUAL SUGAR, FERMENTATION IS COMPLETE.

 

STEP 3: CLARIFICATION

THE CIDER IS THEN RUN THROUGH A FILTER TO HELP WITH CLARIFICATION.

 

STEP 4: POST-FERMENTATION

NOW ITS TIME TO CARBONATE AND AND AT TIMES, BACK SWEETEN. THIS IS THE PROCESS OF ADDING SUGAR BACK INTO THE CIDER. THE AMOUNT OF RESIDUAL SUGAR IN A CIDER IS MEASURED IN BRIX.

 

STEP 5: CAN, BOTTLE & KEG

Every tree on our land at Beak & Skiff Apple Orchard in LaFayette, New York is planted by us, cared for and hand trimmed throughout the year. We guarantee the quality and freshness of our product by growing our own apples and producing our spirits and hard ciders on the same land that has been family owned and farmed for five generations.
