Brooklyn Biltong was founded with two goals in mind, one to introduce biltong to America, and two, lend a hand while doing so. That is still our mission, and now that you know the great taste of original biltong, it’s time to advance your taste buds.

To tickle them in all the right ways, we have just the answer in the form of, garlic, ginger, cardamom… and here’s the kicker.. Cayenne pepper. Did that make you sit up straight, bright eyes? If it’s too much, our original flavor will still be your trusted fall back compadre, but we’re convinced you will fall in love with this new one.

Why another Kickstarter?  

We love the Kickstarter platform for its practical benefit. ie (funds are needed) but what we really love is all the new backers and friends we get to meet and share our story with during each campaign. Excitement is the name of the game and introducing a new flavor, in this case, a “wild” one, is definitely exciting! You get to know about it first and also help us make it a reality.

Logistically speaking, we have grown into the need for a fourth box! Yes, that’s 4 now. The funds for this KS will be used to get that 4th box and also introduce the Peri Peri flavor. We have to file paperwork, purchase full printed bags and yadda yadda. Basically, the funds will be to set up a meeting between your taste buds and Zulu Peri Peri!

 

What we are planning.

With your help, we can expand our production and get our new flavor ready to meet the world!

  • NEW RECIPE: We have already perfected our new Zulu Peri Peri recipe and the response has been great! Now we need your help to order the first run of bags and expand our production line.
  • TWO MORE DRYING BOXES: In order to bring you more biltong, air dried and all, we will be purchasing and shipping two more South African Biltong boxes to our USDA facility.

We are Phin & Phebes (pronounced "Fin" and "Feebes") Ice Cream of Brooklyn, New York. We make unique and interesting flavors with a little something for everyone. All of our flavors start out in our home kitchen and we produce them on a larger scale so we can share them with you.

Our Dairy & Ingredients

We do not put stabilizers or syrups in our ice cream because we believe that ice cream can be one of the purest foods if made properly. Additionally we use only the best all-natural ingredients and our hormone free dairy comes from family owned farms across New York, Rhode Island and Massachusetts.

The beginning...

We made our first batch of ice cream in February of 2010 when looking for a yummy wintertime hobby. We brainstormed a flavor that was inspired by the Ritz cracker sandwiches filled with marshmallow and peanut butter that we loved as kids. We cranked it up a notch though and covered these in caramel and chocolate and broke them up into a sweet cream base. The results? "Fluffnut" ice cream, our first flavor and also now the name of our dog.

 

 

The next three months...

We spent every weekend for the next three months prototyping as many flavors as possible. We conceived of flavors such as: Coconut Key Lime, Banana Whama, Goat Cheese Caramal, Caramal Brownie Boom, Ginger Cookie Snap, Maple Bacon Pecan and so on. We wrote all our flavors down on our chalkboard wall in our kitchen. We ate a lot (like really a lot) of ice cream.

 

 

Brooklyn Lyceum Fair

We got accepted into the Brooklyn Lyceum Fair, an annual food and arts fair in Brooklyn where we made and brought seven unique flavors. This is our first public debut. We get a great response from people and sell out halfway through the second day.

 

 

The Hester Street Fair

A couple months later we apply and we get accepted into the Hester Street Fair, a street fair in the historic Lower East Side. We are still working full-time jobs and slinging ice cream on the weekends. We use this opportunity to experiment with seeing what flavors people like and further exploring ice cream as a viable long-term plan.

 

 

Our First Store Sales!

In the fall of 2010 we started selling our ice cream at Brucie's in Cobble Hill and Marlow & Daughters in Williamsburg. While still working full-time jobs we made enough small inventory to sell in these two stores. We never slept.

 

 

Ice Cream University!

In January of 2011 we attended Penn State's famous week long ice cream course, otherwise known as Ice Cream University. There we learned all about the science of ice cream and many other valuable things about ice cream and the industry.

 

 

The Road Ahead

We knew our small little ice cream operation had hit its max potential and we started to think bigger. We knew we wouldn't be able to make a significant difference while doing this on the side. So in January of 2011 we quit our day jobs. What came next was several months devoted to a business plan, recreating our flavors with a new formula and sourcing ingredients.

 

 

Here We Are Today

Hundreds of flavor prototypes later, we are back and ready to bring you some ice cream!

Advertising Spotlight: Budweiser debuts video of Brooklyn blind taste test

 

 

Last month during NYC Restaurant Week, a production crew invited young adults 21-and-older a sneak peek at a new bar in Brooklyn, weeks before its official opening. On tap was a smooth, crisp golden lager, aged over beechwood, that has boasted the same recipe for 139 years – and only after guests sampled the beer did they find out they were drinking Budweiser. Yes, the King of Beers.

Their surprise was all caught on hidden cameras in a video titled “This Bud’s for Brooklyn,” unveiled today on YouTube

 

 

Upon tasting the beer, people described it as “light, crisp,” and “great on a 100-degree day.” And when they were told it was Budweiser, reactions ranged from an astonished, “Really?” and “Is that what that is?” and even “That’s awesome.”

Earlier this year, the brand aired a new television spot during Super Bowl XLIX titled, “Brewed the Hard Way,” which celebrated Budweiser as a macro beer enjoyed by many.

“We need to continue to make bold and proud statements affirming Budweiser’s quality and role in beer culture, said Brian Perkins, vice president, Budweiser. “‘This Bud’s for Brooklyn’ is an expansion of that stake in the ground. About the Company
From Brooklyn to the (sort of) Wild West
This story is about a Brooklyn based girl who traded in her New York City Metrocard for the solitude of a circa-1898 cabin at the edge of the Rocky Mountain foothills.
Once settled, marathon baking sessions ensued in the tiny kitchen and Bespoke crackers unexpectedly came to the fore.
Playing with countless flavor iterations became a favorite pastime. And happily, many others enjoyed tasting them over and over again too.
Fast forward to now and Bespoke crackers are ready for prime time. I hope you enjoy them as much as I do.
