Chameleon Cold-Brew is handcrafted in Austin, Texas by a small group of dedicated coffeenistas and entrepreneurs.  We brew each batch low and slow for more than 16 hours at a controlled temperature to produce a super smooth, extra caffeinated concentrated coffee with less acid than traditional hot-brewed coffees.  We only use 100% organic, Fair Trade Arabica coffee beans and filtered water. The rest is up to you. Enjoy Chameleon hot or cold, black, undiluted in small amounts or mixed with your favorite flavors, creamers, or other additions — and it’s perfect for drinking at home, at the office or on the go. You can find Chameleon Cold-Brew in the refrigerated section of select grocers in convenient and recyclable 16oz and 32oz glass bottles.

 

 

THE STORY
Chameleon co-founders Chris Campbell and Steve Williams met at a neighborhood 4th of July party near the University of Texas campus and discovered that they share a passion for the entrepreneurial life. Inspired by many cups of coffee and Steve’s success owning and operating coffee shops, they founded Chameleon Cold-Brew in 2010 with the goal of bringing the high quality, great flavor and convenience of cold-brewed coffee to the masses.  Both Chris and Steve are committed to building the Chameleon brand locally and maintaining its Austin roots while growing beyond the bounds of Central Texas.

Yeast of Eden: the future of beer

Is the idea of a professionally made beer brewed to your own personal taste and specifications the holy grail of ale or just a bit creepy?

Helmets, arm-length rubber gloves and liquid nitrogen are not things which usually spring to mind as you settle in for a summer session in some pleasant beer garden. If they are, you're either a beer technologist or developing an especially unhealthy obsession with 50 Shades of Grey.

Love and grit are not the only things driving the ever-expanding variety of beers that we're currently able to enjoy, and neither is it all about hop-toting American hipsters shaking up the Great British Beer Festival. Deep in the corridors of Cara Technology's research labs in Leatherhead, southern England, a handful of microbiologists and flavour technicians hold both the past and the future of beer drinking in their hands.

Their lab contains hundreds of beer yeast strains, some dating back 130 years. All are cryogenically frozen in tiny vials within a dustbin-sized metal vat. Liquid nitrogen keeps the temperature inside the vat at a cool -190C, so my guide, Ali, is wearing thick gloves and I've been told to stand still.

Whether you fancy resurrecting a pre-revolutionary Russian brew, are a
fan of new-wave fruity fizz or fancy something lower in alcohol yet still flavoursome, there's a yeast strain in the frosted treasure trove that can probably help.
