Beetroot is so rich in insoluble fibers, which are good for intestinal transit; they bring a lot of minerals like potassium and magnesium. They contain anthocyanins that give the red color. Tomatoes contain fiber, mostly insoluble. They bring minerals (potassium, phosphorus, magnesium), oligo-elements (zinc, fluorine), vitamins B and C (10-20mg/100mg of fresh fruits) and strong anti-oxidants: pro-vitamins A (beta-carotene) and lycopene.
